Approved Food Safety Preventive Controls for Human Food
The Food Safety Modernization Act (FSMA) is here and now is the time to start preparing. There are exemptions provided for in the law, but except for very small businesses, most companies that supply food that is consumed within the UNITED STATES are subject to FSMA regulations and requirements.
A significant part of this new regulation is Hazard Analysis and Risk-Based Preventive Controls, which must be understood and taken seriously. Companies will be held responsible for creating their unique Food Safety Preventive Controls plan, produce the documentation to FDA upon oral request or inspection, and provide evidence that the plan was created and is verified by a Qualified Individual (QI).
Food Safety Preventive Controls plan requires a Preventive Controls Qualified Individual (PCQI) for each food manufacturer and storage facility to identify certain food safety risks associated with their foods and processes and to implement preventive controls that minimize these risks. Additionally, the controls require documented verification procedures to ensure the controls are working and detailed corrective actions that address any deviations from the controls. The Food Safety Preventive Controls plan must be fully documented, verified and validated (where necessary) and conform to the new FDA’s standards and definitions. Food Safety Preventive Controls plan is similar to HACCP in that it will require all aspects of the plan to be based on your Hazard Analysis, periodically reviewed, constantly maintained and fully documented.
Ron Vail, Mark Weighner, Luisa Tapia and Michelle Muse of ACET Global Consulting, LLC have recently completed the approved training for Food Safety Preventive Controls for Human Food and are now certified to provide this training for food manufacturing, storage and distribution companies. This training has been approved by the FDA for Preventive Control Qualified Individuals (PCQI) and Qualified Individuals (QI) through a grant with the Food Safety and Preventive Controls Alliance (FSPCA). A FSPCA Certificate will be provided upon completion of this training. This certificate is an accepted method of demonstrating to regulators knowledge and competence of the Preventive Controls requirements of FSMA Food Safety Preventive Controls plan.
