Prerequisite Programs, GMP’s
Implementation and ongoing management of the programs that support the Good Manufacturing Practices are required by law and are necessary to support development of advanced food safety systems such as HACCP and the GFSI Food Safety Systems. The Prerequisite Programs are fundamental basics that either individually or in combination form the foundation of a comprehensive food safety system.
Successful and continuous implementation and maintenance of the various Prerequisite Programs requires understanding of the components that need developing and implementation. Supporting the programs are practical routine management processes, appropriate records, review of the program performance and communication throughout the organization.
Food operations require common programs such as Sanitation, Maintenance and Pest Control, but other food operations will require different programs specific to their operations. Management is responsible for understanding which programs are pertinent for their operation and ensure appropriate resources are provided for successful and ongoing management.
ACET will provide applicable guidance, coaching and facilitation to assist food operations with understanding and implementing individual Prerequisite Programs and demonstrate how they integrated in a complete food safety management system.

Option
2 Day Option
Day 1 – Introduction to Prerequisite Program options with explanation, training and education on the various components of each program that is pertinent to a Client’s operation. Day 1 will set up Day 2 Workshops.
Day 2 – Workshops will be designed to assess existing Prerequisite Programs and determine the improvement opportunities for either development, implementation or maintenance. Program documentation will also be reviewed to comply with document control criteria required to support HACCP, GFSI and customer requirements
Finally, a plan will be discussed and agreed on for establishing objective benchmarks for the improvement activities.
